We’re passionate about bringing a fresh new approach to the iconic Lobster Pot without compromising its legendary charm and authenticity. Our goal is to continue serving up the amazing food and drinks that The Lobster Pot has been famous for while adding our own unique twist. We’ve got some exciting plans in the works, so stay tuned!
The Crazy Lobsters
The Lobster Pot’s exciting new era truly kicked off in Summer 2024 with the arrival of Paul and Sean, affectionately known as ‘The Crazy Lobsters.’
These two seasoned hoteliers, long-time colleagues and even longer-time friends, initially planned a four-month residency. However, Paul quickly found himself captivated by the unique magic of The Pot and knew he had to stay. While Sean has since ventured into his own thrilling new endeavour, their friendship continues to thrive, a testament to the strong bonds forged right here at The Pot.

Our team is made up of young, energetic, and local individuals who are dedicated to providing you with an exceptional experience. We’re always on hand to ensure that your visit is memorable.
Paul Behan
A dynamic force in the hospitality industry and a graduate of Shannon College of Hotel Management, Paul brings a wealth of experience from prestigious hotels across Europe and the UK, including The Morrison Hotel, The Westbury Hotel, The Lausanne Palace, Switzerland, The Soho Hotel London, Bellinter House, The Newpark Hotel Kilkenny, and The Heritage Golf & Spa Resort.
As a General Manager for over 10 years, most recently at The Heritage, Paul is committed to delivering exceptional hospitality. With a keen eye for detail and a forward-thinking approach to customer service, Paul is always striving to stay ahead of the curve.

Ania Swiderska
Joining The Crazy Lobsters team is Chef Ania Swiderska, who brings a wealth of experience from her time under renowned chef Gareth Mullins at The Marker Hotel in Dublin, working as Executive Sous Chef and as Executive head chef at The Dylan Hotel in Ballsbridge.
At The Lobster Pot, guests can expect a menu that highlights the best of Irish cuisine, featuring fresh seafood, homemade desserts, simple but flavoursome dishes, cooked with passion and care!

Ross Houlihan
Meet Ross, the very embodiment of Irish hospitality! Having charmed guests as a supervisor during our bustling Summer 2024 season, we’re absolutely delighted to welcome him back this year as our Assistant Manager.
Always ready with a happy smile and a relaxed manner, Ross ensures every visitor feels right at home. As he enters his final year at the prestigious Shannon College of Hotel Management, his dedication to creating memorable experiences shines through in every interaction.
